Asian-Style Pork Mince Lettuce Cups

Serves 4 · 25 minutes

These light, flavourful lettuce cups make a refreshing change from heavier meals and come together in less than 30 minutes. They're interactive, fun to eat, and packed with delicious Asian flavours you'll find in your local supermarket.

500g pork mince, 2 tbsp vegetable oil, 1 brown onion, finely diced, 2 cloves garlic, crushed, 1 tbsp fresh ginger, grated, 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp hoisin sauce, 1 red capsicum, finely diced, 1 cup frozen corn kernels, 4 spring onions, sliced, 1/4 cup water chestnuts, drained and chopped, 2 iceberg lettuces, leaves separated, Fresh coriander and lime wedges to serve

Method

1. Heat oil in a large wok or frying pan over high heat. Add pork mince and cook, breaking up with a wooden spoon, for 5 minutes until browned.

2. Add onion, garlic and ginger, cooking for 2 minutes until fragrant. Add capsicum and corn, stir-frying for another 3 minutes.

3. Pour in soy sauce, oyster sauce and hoisin sauce. Add water chestnuts and half the spring onions, tossing for 2 minutes until heated through and well combined.

4. To serve, spoon warm pork mixture into lettuce cups. Top with remaining spring onions, coriander leaves and a squeeze of lime. Let everyone build their own at the table for a fun, casual meal.
